Today I’m sharing a perfect drink for those Cinco De Mayo fiestas coming up. It’s my take on a delicious Margarita and I named it a Skinny Spicy Pineapple Margarita. Ole’
I love the idea of utilizing items you’re bringing into the party. So for instance, this El Pato sauce used for enchiladas, I repurposed into a great lime holder. I love the colors it brings out. And of course the mini Patron bottles are perfect for that extra splash of tequila or a great shot for those that want to indulge.
On the rim of the glasses, I used Tajin seasoning to give it a lil kick. I also love the look of the star fruit when it’s cut. It’s a perfect addition to the rim. You could also use pineapple too! In order to have the Tajin stick to the rim, I used a lil agave to rim the glass and then dipped them into the Tajin.
Recipe: makes 1 pitcher
1 cup blanco tequilla
2 cups of muddled pineapple
juice of 1 lime
2 Tbsp. of agave nectar
1 c. of club soda
Starfruit to garnish
In a pitcher, muddle tequila, lime, agave and pineapple. Once muddled, add in the club soda. Add the ice and stir. Strain the pineapple when pouring. Add a few slices of jalapeño & starfruit to garnish. (In these I strained the pineapple out, but you could surely leave it in the glasses.)
You can add more or less of the tequila or club soda to your liking. Enjoy!
